Meet the farm behind our summer Ethiopia
How a washing station 6,000ft up shapes the cup in your hands.
We have been buying from the same washing station for four harvests now. This year the lot came in tighter and sweeter than we expected, and it took a fortnight of roasting to work out why.
Altitude does most of the work
At six thousand feet the cherries ripen slowly. Slow ripening means denser beans, and denser beans hold their sugars through the roast instead of scorching.
